The crumb refers to texture of the inside of your sourdough. These "holes" are caused by accurate and effective fermentation; this is known as an open crumb. Open crumb is generally more sought after than closed crumb when it comes to sourdough. The holes inside the sourdough may seem shiny. This is a sign that the gluten is very well developed. It's not a flaw.
This bread makes amazing grilled cheese sandwiches. The above sandwich is a Mexican Breakfast Grilled Cheese; scrambled eggs, mozzarella cheese, fresh pork sausage and homemade pico de gallo. The trick to making a grilled cheese sandwich with this bread is to use plenty of butter (I prefer margarine) and to grill it on a lower temperature. It takes time for the cheese to melt with this bread. It's best to grill each side like an open face sandwich and once you have the required golden color that's when you place the two sides together!!

Our flour is Non-GMO Project Verified and comes from the wheat fields of Montana.
